The best sourdough pancakes
Fast, easy and delicious Sourdough pancakes are our family favorite addition to Saturday or Sunday breakfast. They require minimal preparation, just an active Sourdough starter. To remember to feed my starter I’ve made a ritual for Friday night to take it out the fridge and add some water and flour. This way i always have something special for weekend mornings and make sure my starter stays alive.
Sourdough pancakes are perfect breakfast food as you can customize them for each family member. One can be done with chocolate chips, another with frozen blueberries and my favorite is butterscotch chips. You can make them plain and top up with maple syrup, honey, Nutella or use some jam or jelly. Apple and peach butter goes well too.
Sourdough pancakes can be cooked on low heat to create a nice golden crust and this allows me to do other breakfast preparation while i cook them, so by the time pancakes are done i have everything else done and ready to eat with my family hot breakfast.
Below are some tips for a fist time cooks:
1. To know when to flip a pancake watch the pot of the butter. If majority of bubbles are popped and butter looks matte then its ready for a flip. Don’t worry if you flip sooner, the only trouble it can cause is spill some butter on your stove. Or maybe you’re a skilled flipper and can do it without any damage to your stove, but i was never that lucky.
2. You can increase amount of honey if you prefer more sweet pancakes or if you dont have any syrup or jam for a topping
3. Also this recipe can handle variations. You don’t have any butter? No worries, use olive or any othe vegetables oil or coconut oil. Just a note that if you have a very flavourful olive oil, the taste might be present in pancakes too. I don’t mind it but it can be an issue for kids or husbands.
4. If you have any whole grains, this an excellent way to eat them. Just add your starter to the whole grain flour and enjoy a healthier meal.
5. I prefer to weight my ingredients foa a more consistent results, as starter can have nore ir less bubbles. Same for the oils.
6. If you’re adding fozen blueberries i would recommend covering frying pan with a lid, as the release moisture and bottom gets dry before you can flip it.
7. You can add more honey for sweetness, but it will make butter more heavy with less bubbles. Doesn’t effects the taste, just an appearance.
8. If you use blueberries or chocolate chips and they leave residue after you flip, have a paper towel handy to wipe quickly your pan between pancakes.
9. Maple syrup makes some of the fluffiest and azure pancakes than do not easily burn and create a beautiful golden crust.
10. I like to whisk batter before pouring to the pan to create more bubbles and airy texture
